Purple and white eggplants from my Haiku Maui garden

For a while at the end of summer my eggplants were going off!  This year we even had some white ones that did well.  They come in a lot of shapes and sizes and colors too.  Here in Hawaii the long purple eggplant can be found in most markets. 

I wouldn't say eggplant is my favorite vegetable to eat, but they are fun to grow and they look so beautiful when they are all shiny and plump.

Eggplants do well in the Haiku Maui climate, and will grow for a long time, making it worthwhile to have a few plants on hand all the time.  In Japan it's considered good luck to have eggplant for the New Year... maybe it's just something that's easy to have growing in the winter months?

When life gives you eggplant, what do you do?  I have learned to cook them many ways and a few of the best recipes I find are:

  • eggplant Parmesan - an Italian baked dish with rich tomato sauce
  • spicy Szechuan eggplant with beef - hot and spicy stir fry
  • moussaka - Greek style casserole that's mild and delicious
  • 15 easy eggplant recipes on RealSimple.com

I love eggplant, especially grilled, but don't think I have ever had a white one. Will have to look for them. Those are beautiful, especially in that blue dish!

Myrl Jeffcoat and thank you again for the feature. I love the blue bowl too.  It's from Target and it's just splatter ware metal, so good enough for taking to the garden and being left outside if needed.

Kat Palmiotti The hard part is the germination.  They don't always come up.  But once you get them going and into the ground they are very hardy and will prevail through drought or rain deluge.  My white eggplant has become a monster and I might have to cut it back.  They don't seem to mind the shorter daylight hours like some plants.  So, yes, they are easy to grow.

Beautiful photos and I love eggplant.  I have never had the white ones.  Do they taste differently from the purple ones?
