One Pan Kielbasa and Vegetables
Fast and easy and one pan to wash.
1 pound Polish Kielbasa
1 summer squash (yellow)
3 small potatoes
3 medium carrots
3 cloves garlic
1 tsp dried sage
salt & pepper to taste
Whatever cooking fat you prefer as the base; e.g., olive oil, butter, chicken schmaltz, canola oil, etc. Use enough to coat base of cast iron pan. I used schmaltz.
Add vegetables (the squash came from my garden). Cook on medium heat for 10 minutes.
Add garlic, kielbasa, herbs (I used Russian Blue Sage) and seasonings. Cook until carrots are as tender as you like. I like soft cooked carrots. You might like them crispier.
Makes 4 generous servings.
