Happy Pie will be Glad When it is Over!

Yesterday was a busy day at my home.  I was cooking up a storm because company was coming for dinner.  On the menu was Hungarian Chicken Paprikash with Egg Noodles, Stir Fried Apples with Walnuts, Brown Sugar, Cinnamon and Raisins.  Also on the menu - Green Beans with Slivered Almonds and Bacon. 

Simmering on the back burner was a large pot of Pumpkin-Butternut Soup, and there were Cheddar Biscuits.  However, it wasn't the cooking that kept me entirely busy.  It was my phone which rang, rang and rang with political canvassing. 

Will I be glad mid-term election campaigning will end and bring things closer to normal next Tuesday?  You betcha!  And, even a peach pie I created was a testament to it!

Michael Jacobs - The recipes for most of the dishes can be found on-line.  However, the stir fried apples, I came up with on my own.  It's fairly simple.  You peel and slice apples like you would for a pie.  In a large skillet, melt a little butter.  Add in brown sugar, cinnamon, raisins, and chopped walnuts.  When a syrup forms, toss in the apples, and stir until tender.  The proportion of ingredients varies based on the amount of apples included.

I did not know you like Hungarian food, Myrl. I can teach you to make Kappashtatasta. I'm not sure how you spell it but my grandmother on my father's side was 100% Hungarian and she taught me how to make it. That peach pie looks fabulous, too!!
