Thankful for Leftovers

Those who know me well, also know I swim a lot of laps.  It's no secret that I often return home, damp and famished.  Waiting to prepare a meal before eating, can often seem difficult.  And, I'm prone to reaching into the refrigerator and grabbing whatever is handy!  

A couple of evenings ago, I had friends over for dinner.  I always cook more food than necessary.  And, although my kids chastise me for it, things rarely go to waste afterward.  For example, yesterday morning when I returned from the pool, I found these items lingering from the dinner with friends.  I placed them on a small plate for a delightful little brunch.  There was the bit of Brie, some Kalamata Olives, and a few of my favorite Lesley Stow Raincoast Crisps.  I also plated a patch of Fresh Green Beans, with Bacon, Slivered Almonds, and Red Bell Pepper Bits.  Also, those two sprigs of Curry Plant adorning the side, provided delightful aromatherapy. 

After adding, in a half glass of Shenandoah Valley's Iron Hub Grenache from the year 2013 leftover in the bottle, and what more could a gal need?  I found out during a nice nap afterward?  

Life is so beautiful in its simplest form.

Elyse Berman - I love to cook!  But, don't really do it often because my family is grown.  However, when they come home, or I have friends over, I find it is a time to cut loose and let those recipes flow.  But, it isn't an everyday thing!

That looks yummy.  I know there are days that I look forward to leftovers from a previous meal, only to get home and find out my husband ate them.  That usually means it was a great meal, because he doesn't do leftovers.

Myrl Jeffcoat your post title made me LOL for two reasons.

1) If it were not for left overs I would not have lunch. With my spouse working I come home at luch to find a note of what I can find in the fridge.

2) My sister hated left overs as a kid and vowed she would never have left overs in her home. 50 years later (and two kids) she has kept her promise and never saved anything as a leftover.
