Those who know me well, also know I swim a lot of laps. It's no secret that I often return home, damp and famished. Waiting to prepare a meal before eating, can often seem difficult. And, I'm prone to reaching into the refrigerator and grabbing whatever is handy!
A couple of evenings ago, I had friends over for dinner. I always cook more food than necessary. And, although my kids chastise me for it, things rarely go to waste afterward. For example, yesterday morning when I returned from the pool, I found these items lingering from the dinner with friends. I placed them on a small plate for a delightful little brunch. There was the bit of Brie, some Kalamata Olives, and a few of my favorite Lesley Stow Raincoast Crisps. I also plated a patch of Fresh Green Beans, with Bacon, Slivered Almonds, and Red Bell Pepper Bits. Also, those two sprigs of Curry Plant adorning the side, provided delightful aromatherapy.
After adding, in a half glass of Shenandoah Valley's Iron Hub Grenache from the year 2013 leftover in the bottle, and what more could a gal need? I found out during a nice nap afterward?
Life is so beautiful in its simplest form.
