I have said before how much I like Ellie Krieger's recipes. Ellie is the nutrionist on PBS who has wonderful recipe's that are healthy and easy! This is recipe is one of my favorites! It is my go to recipe for shrimp! I have tweaked it a bit, but I love it!
1 ¼ pounds large shrimp, peeled and deveined (I use U12-15 shrimp)
10 large cloves garlic sliced
1 package of fresh baby spinach leaves
3 tablespoons olive oil
Smoked paprika (I love Penzey's smoked Spanish paprika)
Chipotle pepper powder
Rinse the shrimp and pat dry with a paper towel. Thinly slice the garlic. Place the oil in a large non-stick skillet and heat over a medium-high heat. Reduce the heat to medium-low, add the sliced garlic and cook, stirring frequently, until the garlic is golden, about 5 minutes. Watch closely so the garlic does not burn. Transfer the garlic to a small dish using a slotted spoon, leaving the oil in the skillet.
Raise the heat on the skillet to medium-high, add the shrimp, sprinkle with the smoked paprika, chipotle pepper powder and sea salt. Cook until the shrimp turns pink, about 3 minutes. Stir in the spinach and return the garlic to the pan and turn off the heat. Stir until the spinach just wilts.
