Merry Christmas Eve 2018...from Charlotte NC

What a wonderful Christmas Eve! Family in for some holiday cheer... A big holiday brunch today with family since Matt & Meli (my oldest and his wife) have a Peruvian Christmas celebration late this evening with Meli's family.

We always do dinner, never a big brunch so, this was a new 'plan' and experience for us! Here's what was on the menu:

Scrambled eggs with lobster
Bacon (Don't judge me, Barbara Todaro!!!)
Avocado caprise
Cinnamon-maple French toast
Blueberry pancakes
Homemade maple-pecan butter (with store-bought syrups & local honey)
Sausage breakfast casserole
Cream cheese banana bread (Thank you, Will Hamm! It was delicious!)

Wishing you the merriest of Christmases!
The packages are all wrapped & packed and my dishes made for an early rise and travel to Columbia for Christmas Day. As always, I'm sure we'll have enough food to feed the masses! Yes, we are READY!

And, finally...the stockings are hung by the chimney with care...and Santa is ready for a night cap!

You know, I realized just how hard serving several big dishes for breakfast/brunch at the same time is, Vickie Teel! I had to be prepared and I'm glad I was! LOL

Ha! Well, we did have left-overs but, not too many, George Souto! It was definitely a Christmas Eve feast - that I really didn't need to eat! It's been a week-long food-fest, that's for sure!

Well, thank you, Endre Barath, Jr. and Merry Christmas to you and Diane and the fur babies too!

I felt like I ate a lot but, I really didn't - I did have a slice of the cream cheese banana bread because that's one of my dishes for tomorrow (I was assigned a desert and a salad) and I wanted to test it today! Anyway, it turned out great and I just got my second batch in the oven for tomorrow. Prime rib and ham is on the menu tomorrow but, other than my dishes, I don't know what everybody else is bringing. It will be enough for an army, I'm sure!

What are you cooking tomorrow?!

Debe, I love and prefer Christmas Eve (the European in me) so I made something easy tonight:) Seared Ahi Tuna with mashed potatoes and snow peas with mushrooms and onions.... anyway Diane insisted on Pasta for tomorrow so I have to make Sauce 4-6 hours later we will have "sauce", love it no company this year, just us the the animal farm:))Endre

Oh, Ahi Tuna and mashed potatoes sound great to me, Endre! I enjoy doing a celebration on Christmas Eve also. We always did that at one of my grandmother's homes and then Christmas Day at the other one (they lived right around the corner from one another). As a child, the two-day celebration was heaven! Now, we do both - one on Christmas Eve with just our children and then the whole family and a few friends on Christmas Day.

When the bread comes out of the oven, I'm turning in - it's been a LONG day! LOL

I don't know if this is going to become tradition but, if so, I'm going to find some dishes I can prepare ahead of time and that can be kept warm. It was TOUGH having everything come out all at once, Sharon Lee! Although we're traveling today, it'll be far more laid-back with more cooks in the kitchen!

Debe, just following up to the conversation, I am not a fan of bringing a couple dishes and then bringing left overs home from being out...but that is just me. I saw your comment above yes it is a challenge to bring all the food out at the same time. I would always prefer a bigger kitchen with more toys in them:)) still I would not want too many people in my kitchen:))Endre

You know, the leftovers were good tonight but, like you, I'd rather be the host, Endre Barath, Jr.! And, even with all of the gadgets, flipping French toast and pancakes as well as scrambling eggs and cutting up avocado all at the same time was a major challenge. Now, had I had one more hand, it may not have been such a challenge but, I have a hard time delegating in my kitchen! LOL
