There is an interesting story behind the creation of Bananas Foster. Bananas were cheap and plentiful coming into this port town so one restaurant owner told her chef to come up with a dish to use them. That clever chef created the ever popular dessert. Necessity is the mother of invention! ūüćƬ†

I can't even say Bananas Foster without mentioning The Down Under or its owner Leonce Picot, a brilliant Fort Lauderdale restaurateur, both now gone. The restaurant was demolished about a decade ago and Leonce passed last August. RIP!
