Last night I rewatched a favorite movie titled,“Tortilla Soup”. I love it because the characters portray their love of food, which I also have.
This delightful PG 13 rated movie has one of my favorite actors, Hector Elizondo, who played the concierge in “Pretty Woman.” In this flick he plays a Mexican-American master chef, with three daughters. After the death of his wife, he has lost his taste for food. But still manages to cook up some amazing looking dishes.
One of his dishes, with apples and bread, was actually a “rescue” created from a kitchen disaster at his restaurant. He names it, Belle Melange’ – which translates roughly, to “Lovely Mess.”
Since almost everything is on the internet these days, I googled to see if any recipes were available for the dishes in the movie. And was happy when I found several. I slightly adapted one for Belle Melange’, by adding nutmeg, and dried cranberries, and was pleased with the outcome.

Apple Bread Pudding - Belle Melange’ Lovely Mess
Oven needs to be preheated to 350 F.
A Buttered 13x 9 inch glass casserole dish will be needed.
In a medium saucepan, melt butter, and add bread cubes. Stir evenly to coat.
Spread the cubes on a baking sheet and bake until crisp and lightly brown – about 12 to 15 minutes. After removing the bread from the oven, increase temperature to 400 degrees.
In a saucepan, combine the sugar and water. Bring to a boil. Remove from the heat. Stir in the cinnamon and nutmeg. Set aside.
In a large mixing bowl, combine the apples, walnuts, dried cranberries, cream cheese and toasted bread cubes. Drizzle with the sugar syrup and mix to evenly distribute. Transfer the mixture to the prepared pan.
Bake uncovered, stirring occasionally for 15 minutes.
Then bake without stirring, until the top is golden brown and crusty and the liquid is almost gone – approximately 10 minutes.
Serve warm with whipped cream.
