Yesterday, St Patrick's Day, was celebrated in fine form here at Emo's Eating Emporium!
We began the day baking Green Creme de Menthe & Chocolate Chip cookies and the majority survived until dinner time, lol
We then prepared the Irish Lamb shanks which had been marinating in a wet rub of garlic, red chilies, cinnamon, curry powder, oregano and paprika overnight.
After searing them in all sides, a mixture of carrots, shallots, cinnamon and bay leaves was lightly sautéed before a full bottle of white wine and a little chicken broth was added to the pan. Into the oven to slow cook for 3 hours.
Next, because I cannot enjoy potatoes or any root vegetables in any way shape or form any longer, we prepared the Daicon Radish for my Mash the shanks will be nestled in on the plate. (great for those simply reducing their Carbs too - 9g net carbs vs 25g in one potato)
A few green peas, some grilled green onion and a few sliced red radish and we're ready to plate! ( I only had the Radish and Shank but no need to limit anyone else who also was enjoying a pint of Guinness!)
