A Favorite Recipe: Honey Walnut Prawns

I have a really delicious asian dish I enjoy.  It is Honey Walnut Prawns or Shrimp.  When I find prawns on special in my favorite local grocery store, BelAir, it always acts as a catalyst to cook them up.

Here's the recipe.



Honey Walnut Prawns

Ingredients:

  • 1 lb of large peeled and deveined shrimp
  • 1/2 cup walnuts
  • 5 cups water
  • 1 cup sugar
  • 1 cups oil
  • 1/2 cup cornstarch
  • 1/2 cup egg whites
  • 2 Tbs honey
  • 3 Tbs mayonnaise
  • 1 Tbs fresh lemon juice
  • 1/2 Tbs condensed milk 

 

Preparation:

Rinse walnuts in water, then boil in 5 cups water, continually changing water until clear. Once clear, boil with sugar until sugar dissolves.

Deep fry walnuts in 2 cups oil, until they are shiny and brown, no longer golden.

Place walnuts on cookie sheet, let cool.

Combine cornstarch and egg whites together to form a thick, sticky texture and mix well with Shrimp. Set aside. Mix honey, mayonnaise, lemon juice, and condensed milk in a medium bowl until smooth. Heat oil until boiling, then deep fry the shrimp until golden brown.

Drain, then fold in honey mayonnaise mixture. Mix well, sprinkle with walnuts, and arrange on platter.

[note from Myrl]:  I like serving this dish on a bed of shredded carrots

Roy - I have removed that last "1/2 Cup" from the recipe.  In actuality it does not exist.  I think it was a gremlin who typed it in.  I double checked my recipe to make certain!

How many calories are in this dish, Myrl? Or do you think it's countered by the bed of carrots, LOL? Actually, the sugar content seems awfully high at 1 cup of sugar and you know, carrots have sugar, too.

Naturally, if you don't have to watch your sugar intake and you don't care about calories, hey, go walk on the other side of the street why doncha and leave us old folks alone.

Must admit it sounds delicious.

Most of the sugar does not remain in this recipe, Elizabeth.  It is used in the last baths of water to boil the walnuts.  Then drained away.

There are times when I eat what I want to eat, and then budget calories at other times.  I'm a foodie. . . It is what it is!

Well, I looked it up, Myrl. There are 1,110 calories in a cup & 1/2 serving, which is about what most people would consume. That is almost my entire caloric intake for the day. You are a courageous person.

Yep, that's a lot of calories.  I burn about a half of 'em up when I swim.   I figure I swim about 100 days a year, but eat Honey Walnut Prawns only one or twice!

Hi Myrl Jeffcoat , what a pretty dish. It probably tastes wonderful, too. I have never tried it. When I add a high calorie dish, I usually plan for a hike to A Mountain nearby, too. And sometimes double the miles. :)
