Next week on Easter, we will be having some tradition things that my mother or grandmother use to make before they got the restaurant. I was only 5 but remember the food well.
So one of the item I am going to make is Pennsylvania dutch potato filling. One of these days before I get mush older I need to write down the recipe. From memory it is:
about 8 red potatoes, made like mash mashed potatoes.
1 med onion, diced and saute
6 stalks of celery diced and saute.
8 slices of bread diced
parsley and lots of butter.
Mixed it all to together with the butter on top, put in a baking dish and bake at 350 for 40 mins.
I can not wait for that for sure.
