Speechless Sunday: Purple Asparagus or Green Asparagus?

Last Sunday I wrote about the Twelve different varieties of Asparagus and I received a great many questions what it taste like and how does it look. The list goes on and on.... so with that said. Let me show you what it looks like if you use it raw and what happens when you blanch it like I did. Or if you bake it or saute it.

As you can see below, the color changes to Green and almost a Bright Green. So if you want to impress your friends put some in a salad both ways. They will think you used two different types of asparagus.

I think that the purple looks really nice overall and taste is basically kind of nice with the right food

Interesting. So it turns green after cooking. I only see the green ones at my store, but I'm going to keep an eye out when I go elsewhere to see if I can find red ones.

Love the purple - the sweetness really sets it apart from others, Endre. Nifty idea to buy the one type since the color changes in heat but, remains purple in a salad - or as a veggie for dipping!

Interesting.  Have never seen the purple variety.  I know some of my purple pole beans turn green when they are cooked, so not surprised the asparagus does the same.
