I love summer time - it's my favorite season! I enjoy spending time out in the sun and all the delicious summer recipes!
Now that I'm plant-based, this will be the first summer without grilling meat, so I've got to come up with some more ideas for our summer time meals.
Summer Plant Based Recipes
I used to love chicken salad sandwiches. Especially the ones from Jason's Deli. But alas, that is not on the menu.
I had heard that chickpeas make a great subsitution for chicken or tuna, so it was time to give it a try. I also needed to find something instead of mayo.
I think I created a WINNING Sweet & Creamy Chickpea Salad Sandwich recipe that is perfect for summer. It's got pineapple, like the Jason's Deli version and a nice crunch from celery and creaminess from tahini. Yum!
Homemade Burrito Bowls
Another summery favorite is Cilantro Lime Rice! Oh it's so good, but not when it's white rice & has added oil. So, I created a no-oil version with Brown Basmati Rice & just some cilantro, lime, and optional corn kernels. Plus, I make it in the Instant Pot so it's super fast! The cilantro lime rice goes great with black beans, veggies, guacamole, and salsa more amazing homeade burrito bowls that are so filling and nutritious!
Don't think you like Kale???
Then you haven't tried my Italian Cashew Creamed Kale recipe. It is to DIE for! I literally made a double batch yesterday and my husband hogged the entire thing. He laughed and said if I had told him he would be begging for my kale recipe a year ago he would have called me crazy. Haha! You gotta try it and it's so easy to make!
