Zucchini Muffins Recipe
Chef Dolores served some delicious zucchini muffins and I requested the recipe to share with you.
ZUCCHINI MUFFINS RECIPE
2 cups flour
3/4 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
3/4 cup sugar
2/3 cup veg. oil
2 large eggs
1 ½ cups shredded zucchini
In large bowl whisk flour, baking soda, baking powder, salt and cinnamon.
In medium bowl, combine sugar, veg. oil and eggs. Whisk for 30 seconds to dissolve sugar.
Fold in the shredded zucchini and then stir into the flour mixture.
Divide batter equally into muffin cups, a slightly heaping ¼ cup in each.
Sprinkle with Demerara sugar.
Bake 20 to 23 minutes until crowned and lightly browned.
Remove from pan to wire racks to cool.
