My husband and I are about to host a large party for some co-workers & friends and we have decided it will be 100% plant-based. Here are a few of the ideas that we may have on our menu!
Oil-Free Tortilla Chips
While it's not hard to find vegan chips, chips from the store are not healthy (obv) because of all the OIL. And no, even olive oil and extra virgin olive oil is NOT, I repeat, NOT heart-healthy. That is marketing mumbo-jumbo and most of the country has bought it hook line and sinker. All oils are 100% fat and do NOT improve your heart health. On the contrary, there are lots of studies proving otherwise. So, what do you do? Make your own! It is so easy to find oil free tortillas and bake them your self. We will be serving these No-Oil Chili Lime Tortilla Chips with some guacamole!
Simple Summer Corn Chowder
For a nice light appetizer, this easy plant-based corn chowder can really hit the spot! It uses a cashew cream sauce that is easy to make to give it the creaminess instead of milk or cream.
Portabello Mushroom Burgers & Mexican Street Corn
For the main course we are going to serve some delicious grilled portabello mushrooms and all the fixings for delicious burgers. Mushrooms have a great savory flavor and meat like texture that makes an easy replacement for beef burgers. As a side we will be making easy Mexican Street Corn that again uses a simple cashew cream sauce!
Can't forget about dessert
For dessert we will have a couple options including this Nutella "Nice Cream" which is made with ripe frozen bananas, hazelnuts, cocoa powder, and dates. We will also have some Peanut Butter Cookies made from lentils that all the kids love! We may even throw in some vegan chocolate chips into the peanut butter cookies.
