Not So Speechless Sunday: From Hot Pink To Garnet Red Sprouts!

Yesterday, at the Santa Barbara Farmers, as I walked by the sprout farmers, my attention was drawn to this amazing bunch of sprouts pictured above!  They ranged from hot pink to garnet red.  And this was all that was left in the large tray they had been sprouted in!

What you are seeing are red garnet amaranth sprouts.  According to many of the sites, I looked at amaranth is a non gluten seed.  Here is a summary of its benefits:

"Amaranth is a good source of fiber, protein, manganese, magnesium, phosphorus and iron, along with several other important micronutrients. Amaranth is high in several antioxidants, such as gallic acid, p-hydroxybenzoic acid and vanillic acid, which may help protect against disease."

Ron and Alexandra Seigel GORGEOUS photo. I recently, quite by accident, let some garlic scapes go to seed (not actual seeds, tiny bulbs - bulbils). The bulbils are DELICIOUS - very very very very very strong garlic flavor and crunchy. I suspect they'd be awesome in lieu of sesame seeds on a bagel, or baked into bread, sprinkled on salads... Farmers markets are just a constant source of inspiration. We need more indoor farms, get farmers' markets year-round!
