A little over a week ago, I invited you all to a virtual party with me in the SuperBowl Countdown post. I've received a few RSVP's and am enjoying the recipes that have already been shared.
I'll be bringing my easy peasy to make Shrimp Butter and crackers for appetizers and also cooking up some Cajun Burgers.
Shrimp Butter:
1/4 C. Butter, softened
8 oz. Cream Cheese
1 T Lemon juice
4 T Mayonnaise
salt, pepper, garlic salt, onion to taste
Mix all ingredients together. Add 2 cups of fresh chopped shrimp.

I don't have an actual recipe for the Cajun burgers because it depends on how many people are coming. However, here is a list of the ingredients I use. If you've ever made burgers, you can probably come up with reasonable proportions of each.
Cajun Burgers:
Ground beef
Cajun sauce
Ketchup
Soy Sauce
Egg (for binder)
salt, pepper and garlic salts to taste
If you end up putting in too many wet ingredients, dry it up a bit with Panko bread crumbs or Potato Buds.
Everyone can bring a drink of their choice. I haven't decided on mine yet.

Here's my contribution --- sorry, no pictures. I don't eat sugar anymore. But this is my favorite oldie but goodie:
CHOCOLATE PIZZA - 1/2 lb White Almond Bark. 8 oz semi-sweet chocolate bits. Half cup each: mini-marshmellows; salted peanuts, Rice Krispies, coconut; red or green (or a mix) of candied cherries. Reserve 2 squares of almond bark. Put chocolate and remaining almond bark in 4 cup glass measure Microwave on high, stirring occasionally until melted. Stir in marshmellows, nuts, and Rice Krispies. Mix well. Pour onto greased 10" round pizza pan or plate. Smooth out to level thickness. Sprinkle pizza with coconut, and dot with cherries. Microwave reserved almond bark in glass measure on high until melted. Stir. Drizzle over pizza. Cool until set.
Note: This is an old recipe. It referenced Microcook and not Microwave! LOL! It called for specific timing; however, all you need to do is get it to melt today!

Love the quote - it's so true. You have to put your heart into cooking - and that's when the soul comes alive in food. Your shrimp butter sounds so yummy - burgers too, although, I'd use turkey burger. No meat, Debb.
