White Chicken Chili with a KICK!
The below recipe is good for 8 to 10 people. If you have a big crowd coming over double the recipe or triple if you need to! Everyone LOVES this chili! There is never any left so that's a good sign!
1 lb chicken, diced
2 med onions, diced
2 cans green chilli's, drained
1 can white beans, drained and rinsed
2 cups chicken broth (may need a little more)
2 tsp red cayenne pepper
1 tsp pepper
3 tsp cilantro, chopped
2 tsp oregano
2 tsp cumin
2-3 jalapenos, chopped
4 cloves garlic, minced
Toppings for serving - shredded cheese, sour cream, olives
Put it all in a crock pot and cook for about 6 hours. Easy Peasy and Delicious! And oh it smells so good too! PS if you don't have a crock pot just cook it on top of the stove. One and Done. Ready for half time with not much work. Do you like that? I sure do!
