What’s for lunch when it’s single digit temperatures outside and you don’t exceed 850 calories a day?  Kale soup!

 

 

Homemade broth made with chicken bones and beef bones, chopped kale, baby carrots, thinly sliced Napa Cabbage, onion and ¼ cup cider vinegar. I could have that for all of my meals, especially after starting the day with a strenuous workout.

 

Hope you stay warm today, if you’re part of this cold spell.

Soup is always a cold weather AND calorie conscious choice. But 850 calories?! Yikes!

Hi Barbara Todaro - It's a chilly day here too, but not as cold as New England or Chicago. My sister sent me a text. She's in Southern, IL with her college bound daughter. They are freezing down there. When it's cold outside, it's always a good day for soup!

well it's warmer and will have more calories, but we're also having soup for dinner.  Chicken chowder with corn and mushrooms.  We just finished off a vegetable beef that probably would fit your calorie diet, although it did have one small potato in the big kettle of soup.

Are you still losing weight? With all the exercise you do, and a low calorie diet to boot, I can't imagine that you are eating as much as you burn
