Beef Barley Stew Recipe

By
Real Estate Broker/Owner with Hamm Homes

With some snow on the ground this was a easy one to make!

for 6 servings

1 pound extra-lean ground beef                  1 medium onion, chopped

2 cups beef broth                                         2/3 cup uncooked barley

2 teaspoons chopped fresh oregano leaves  1/4 teaspoon salt

1/4 teaspoon pepper                                     1 can (12 1/2 Ounces) whole tomatoes

1 can Sliced Water Chestnuts                       1 package frozen mixed vegetables

Heat oven to 350.  Spray 10 inch nonstick skillet with cooking spray.  Cook beef and onion in skillet over medium heat for 7 to 8 minutes, stir occasionally, until beef is brown; drain

Mix beef mixture and remaining ingredients except frozen vegetables in ungreased 3 quart casserole, breaking up tomatoes.

Cove and bake 30 minutes.  Stir in frozen vegetables and cover and bake 30 to 40 minutes longer or until barley is tender.

Enjoy!

You got my mouth watering with this recipe Will. Enjoy, although keep the snow out there. I am enjoying my walks without any snow on the ground although cold.

Hello Sheri,  Well since stores do not have soup, I will be making lots and freezing and giving to neighbors.
