A Chicken Soup Kind Of Day

Real Estate Agent with Century 21 Absolute Realty RS284559

Rainy Day DelcoToday is a dreary, 50 degree, rainy day here in SE PA, where we are under a Stay At Home advisory.  We watched the wind change the direction of the falling rain a few times this morning, as we sat and enjoyed our morning hot beverage on our enclosed porch, and I decided this would be a good day to make chicken soup.

So I found a frozen carcass in the freezer from a rotisserie chicken we enjoyed a few meals from a little while back, and put it in a pot with water.  I cooked it for a while to get the meat to fall off the bones and produce a thick broth.  Then I removed the bones and skin from the broth and added carrots, celery, onion, garlic, frozen sweet corn, spinach, chicken bouillon cube, pepper, bay leaf and brown rice.

Rainy Morning DoveThe soup is now cooking on a low medium heat, just hot enough to cook the rice and blend all the flavors.

We enjoy a thick soup that will suffice for a meal, along with some bread, a small salad and a fruit dessert.

Comfort food on a rainy day during the Covid-19 Pandemic.

Hope you are eating foods that give you comfort and feed your soul.

Take care everyone.

Hi Gloria... that looks yummy! At my end it's 86 degrees and sunny... totally doesn't feel like a warm soup day... more like an ice cream day! Stay well.

Hi Gloria,
I was grubbing around in my freezer the other day and found some boneless skinless chicken thighs that had been in there a long time. They had some freezer burn but I knew the Instant Pot could resurrect them.  Made a yummy Chicken veggie soup.  If I wasn't trying to avoid gaining weight (while confined to home) I'd have made some dumplings.
