Today is a dreary, 50 degree, rainy day here in SE PA, where we are under a Stay At Home advisory. We watched the wind change the direction of the falling rain a few times this morning, as we sat and enjoyed our morning hot beverage on our enclosed porch, and I decided this would be a good day to make chicken soup.
So I found a frozen carcass in the freezer from a rotisserie chicken we enjoyed a few meals from a little while back, and put it in a pot with water. I cooked it for a while to get the meat to fall off the bones and produce a thick broth. Then I removed the bones and skin from the broth and added carrots, celery, onion, garlic, frozen sweet corn, spinach, chicken bouillon cube, pepper, bay leaf and brown rice.
The soup is now cooking on a low medium heat, just hot enough to cook the rice and blend all the flavors.
We enjoy a thick soup that will suffice for a meal, along with some bread, a small salad and a fruit dessert.
