Tired of Coming Up With Meal Ideas? Here's What's for Dinner

As we continue on our journey of staying home, one challenge, in particular, keeps presenting itself. 

What in the world is for dinner?

It's not that we didn't cook before. We did. But we also ate out more often and had activities outside of the house where we shared meals with others. 

Now, the responsibility to come up with healthy meals day after day is all on us. And we were running out of ideas fast!

So, I did some research to come up with an easy list to use when meal planning. One that includes crockpot, vegetarian, and even ideas to mix it up.

Here are ideas to get you started!

Easy Crockpot Meals

  • Chili
  • Honey sesame chicken
  • Pulled pork
  • Beef and broccoli (try cauliflower rice)
  • Pot roast
  • Chicken tortilla soup
  • Salsa chicken (chicken breast with broth, salsa, & taco seasoning – great Mexican food filling!)
  • Fajitas
  • Whole chicken in the crockpot
  • Chicken potato soup (pictured above)

Delicious Salad & Sandwich Ideas

  • Cobb salad
  • Panini (on whole-wheat bread)
  • BLT (try lettuce wraps)
  • BBQ chicken salad
  • Taco salad
  • Grilled cheese sandwiches
  • Meatball subs (use whole wheat buns)
  • Our FAVORITE spinach strawberry salad
  • French dip sandwiches (on whole wheat buns)
  • Philly Sandwiches (on whole wheat buns)
  • Chicken salad sandwiches
  • Egg salad sandwiches

Nourishing Soups

  • Butternut squash soup (our all-time favorite)
  • Chicken noodle soup (you can take out the noodles!)
  • Tomato soup
  • Potato soup
  • Taco soup
  • Carrot soup
  • Sweet potato soup
  • White chicken chili
  • Chili
  • Minestrone soup
  • Corn chowder
  • Stew
  • Chicken tortilla soup
  • Brocolli cheddar soup
  • Chicken potato soup

And note that the meal ideas also include tips to make dinners healthier! Cauliflower rice makes a great grain substitute, as well as sweet potato and lettuce wraps. Switch things up and experiment with what you like best!

Great suggestions,   I write up my menu for 2 weeks and works great for my shopping and that my wife knows what we are always happening ahead of time.

I've been enjoying setting up a weekly plan and pretty much sticking to it. I've been doing just about everything with fresh ingredients and nothing processed. Tonight, though, I'm using JARRED basil pesto on a proscuitto/provolone panini not homemade pesto. For shame!

Hi Jennifer- the hardest thing for me has always been deciding what to have for dinner. I've been used to going several times a week to the store and it's been less wasteful for me. Now I really do have to plan ahead.
