A recipe from my mom

This post is in response to Lise Howe's "Memory of my mother through the foods she cooked" post. Lise shared her memories of her mom and cooking, and asked that we share memories and a recipe that our mom made. So here it goes.

 

When I was growing up, my mom cooked and baked all the time. On Sundays, the house was full of the smell of spaghetti sauce and lasagna or some other delicious meal. She would try new foods, cutting recipes out of magazines or newspapers. I remember her pleasure when my dad or my sisters or I said the meal was great. And baking? She was so good that she made wedding cakes for her friend's weddings. The cakes were perfect.

 

When I was a teenager, my mom tried to teach me how to cook. But I was an unappreciative teen who wanted nothing to do with the kitchen. I figured I'd learn when I had to. When I married my first husband, my dad took him aside and told him I didn't know how to cook much besides boiling water. Haha. Funny but not totally true. I could make eggs and toast.

 

Anyway, as a wedding gift my mom gave me a book of recipes. Recipes that came from her, my grandmother, my sister, and my friends. I still have that book and occasionally flip through it for ideas.

 

So what happened when I left my childhood house? I found I didn't want to eat junk. I wanted to eat good food. So I learned to cook. I subscribed to some company that sent me recipe cards in the mail. I'd get new recipes to try on a regular basis. I learned what I liked and what I didn't. I diced, sliced, sauteed, baked, took cooking classes and tried all sorts of new things. I now love to cook. I try new things all the time. A few years ago, I bought a couple of great cookbooks with vegetarian meals and found they are really good! We aren't vegetarians but I do make about three such meals a week. And I've found some great ways to make all sorts of meat dishes.

 

Anyway, back to Lise Howe 's request for our mom's recipes. When my mother passed away, I went through all the recipes she had in her kitchen and kept a few. I recently found her excellent recipe for sour cream cornbread which comes out deliciously moist. Yum. She has recipes for appetizers such as home-style boursin, soups like tuna-cheddar chowder and entrees like lasagne and quiche lorraine. She also shared desserts such as sour cream coffee cake and cheese pie. It's hard to decide what to share here, but I'm going to choose her sour cream corn bread. Almost everyone likes bread. Plus, what could be easier?

 

Sour-Cream Cornbread

 

3/4 cup yellow corn meal

1 cup all-purpose flour

1/4 cup sugar

2 tsp double-acting baking powder

1/2 tsp baking soda

3/4 tsp salt

1 cup sour cream

1/4 cup milk

1 egg, beaten

2 Tb shortening, melted

 

Mix all ingredients, just enough to blend. Pour into square baking pan and bake in 425 oven about 20 minutes.

 

If you make this, let me know if you liked it better than your normal corn bread!

I've never made her portuguese sweet bread but I have that recipe also and remember it as being a delicious bread. (It's a lot more involved than the corn bread.) And I have her recipes for oatmeal raisin bread, mexican tamale pie, spareribs korean style, pot roast polynesian style, beef in sour cream, danish meat balls, spanish rice and meatballs, braised pork chops, pork stew with apples and potatoes, apple raisin brown betty, strawberry rhubarb pie, southern pecan pie, lizzies (a dessert) and chocolate snowballs.

Kat I grew up first then years eating at superb Restaurants and when not than we would eat my mother's cooking.... she had kept her own little handwritten and then typed recipes and when she passed away my father said when I pass away make sure you keep the cook book, they put it together in a plastic binder leftovers from my High School days and indeed I still have it.... Hi Kat Palmiotti - I will bet when your mother gave you that recipe book you didn't realize what a priceless book it would be. I only wish I had a book like that from my mom.  

It has been a while since I made cornbread. Do I dare to make some again?  I just may have to!  Thank you for this recipe. 

Funny story, when I got married at 20, I tried all kinds of recipes on my husband. He never knew it was the first time I ever made those dishes.

When my daughter was engaged to be married, I made a cookbook for her with recipes from relatives and friends. The wedding never happened, but several of us have the keepsake cookbook. 

She made the right decision when she decided not to go through with that marriage. It was tough at first, but last year she married a wonderful guy who is perfect for her!

Kat Palmiotti - The next time I get to Kalispell, I would love to see you and listen to more stories about your mom. The fact that she could make wedding cakes and do so many thoughtful and special things for others, including family was really a gift for everyone in your family and I'm sure her friends thought so too. 

That weekend I spent with you was also special. You are so kind, intelligent, happy to be around, and easy to talk to. You made me feel so comfortable, I really didn't want to go back to Texas. When did your mother pass away?

Patricia Feager, MBA, CRS, GRI,MRP - My mom passed away the same year I got married (2011). She was so happy to be at the wedding, and when my (future) husband cried as I walked down the aisle in my green dress (yup), all her dreams were complete. We married in late July and in mid-November my dad let me know none of the cancer medications were working and they were taking her off all medicine. I went to see her the first week in December and she died a week later. She made sure, though, to buy me a Christmas present - a beautiful mug which I look at daily. 

Thank you for your comment about not wanting to go back to Texas. I truly enjoyed your visit. You have to come again!

Kat Palmiotti - clearly, your mom had unselfish love and loved you and her family very, very much. I can only imagine how happy you and your husband made her on the day you got married. As far as wearing a green dress, I think that's great! I was just reading an article yesterday about the history of the "white dress." Apparently, it became popular because of some Queen, I think I read Victoria, but can't be certain. Of course, white symbolized purity, but it wasn't always traditional before then and most brides wore a dress in any other color, except white. White wasn't first choice because they were not practical. They wanted to have a nice dress to dress on other occasions. For some reason, white became the traditional dress through the centuries. But the best part of your wedding day, was as you said, "all her dreams were complete." What a beautiful love story. First the transfer of love from your mother to your future husband knowing she accepted him as her son-in-law and knew in her heart you were receiving the greatest gift on earth. Love. It really was bitter sweet in the end because once again, your parents jointly agreed to take her off meds that were not working. Another great example of unselfish love. I'm so glad you got to see her the first week in December. I'm guessing every anniversary of that first week in December brings back a flood off memories. To be loved is the greatest gift of all and I think she gave you her heart to keep that love alive. Your story brings tears to my eyes.
