July 4th Weekend...What Are You Cooking?


Granted this July the Fourth will be different for many if not all of us. With most of us staying in or at a distance from others, including our family, this is another holiday that we will be celebrating later this year. 


So far, we’ll be celebrating Easter, Mother’s Day, many many birthdays, Father’s Day, Memorial Day, and now July 4th!!!  God willing, if my whole family gets together for Thanksgiving, we’ll have much to be thankful for. 


So, since I won’t be having the whole family over to celebrate July 4, I’ll have to simplify my July 4th menu. One of my favorite things to eat is a good hot dog on the grill, and that’s what I have once a year for July 4th. 


However, for just the two of us, we’ll have ribs that Larry cooks on the smoker, my homemade bbq sauce, corn on the cob, salad, and my homemade blueberry peach cobbler. (See recipe below)

Blueberry Peach Cobbler



½ c cold water

3 c. sliced fresh peaches (3-6)

1c fresh blueberries

1Tbls Butter  

1Tbls lemon juice

¼ c. packed brown sugar

2 Tbls coarse granulated sugar

1 Tbsp. Cornstarch

¼ tsp ground nutmeg or cinnamon



1 c. all-purpose flour 

 ½ c. granulated sugar

1 ½ tsp baking powder

 ½ c. milk  

¼ c. butter/softened


For the topping, stir together flour, ½ c. sugar, baking powder.  Add milk and ¼ c. butter all at once.  Stir till smooth, set aside**


** I double the recipe for the topping because it’s so good!!!


For the filling, in a medium saucepan stir together brown sugar and cornstarch; stir in water.  Add peaches and blueberries.  Cook and stir over medium heat till thickened and bubbly.  Add 1 Tbl. Butter and lemon juice; stir till butter melts.  Pour into a 1 ½ qt ungreased casserole.  Spoon topping in mounds over hot filling; spread evenly over the filling.  Sprinkle with a mixture of 2 Tbls. Coarse sugar and nutmeg or cinnamon.  Place on a shallow baking pan in the oven.


Bake cobbler in a 350-degree oven about 35 minutes or till bubbly and a toothpick inserted into crust comes out clean.  Serve warm with ice cream, if desired.  Makes 6 servings.

I cooked sausages hot and sweet Italian (organic)  they were browned with onions and garlic olive oil when golden brown seared with Massella wine than a few minutes later add a little water with honey until the water almost cooks out then add can of tomato paste cook together - add to another pot one can of tomato sauce the other diced tomato--Then you add the pot of sausages and the cooked and seasoned short ribs - some roasted garlic -dash more of wine -let it cook a few more hours so the house smells wonderful---server with you favorite penne pasta;;;; Your dessert recipe will be on my list sounds heavenly - I adore sweets  they make the meal

Kathy I made a Potato Salad and a Pasta Salad already today.... need the flavors to get better overnight... tomorrow a simple stuffed pepper recipe and of course the mandatory Sausages with the fixings and bread:) and who knows I might throw in a salad... keep in mind one person is coming over so I needed to go overboard:)Endre

I made Bobby Flay's southwest potatoes.  Lots of cream, salt, pepper and a chipotle pepper.  I wanted to add a second pepper, but Mary Margaret said no.    Have a wonderful Fourth!

We will do hot dogs and burgers on the smokeless electric grill (condo life). I like the Beyond Burgers and also bought their bratwurst to try but my husband will have the real thing. Potato salad, cole slaw and baked beans are already done and we will have leftovers for a day or two. I am going to try making corn and black bean salsa just for fun. I don't think we'll get to dessert tonight!

Hi Ron and Alexandra Seigel years ago when we were in the Keys for a diving trip, we made lobster fra diavolo!  We had ribs in the smoker, homemade bbq sauce and a salad. And for dessert, blueberry peach cobbler.

Yum, looks like a great recipe!

We have been doing a lot of cooking in the last few days - grilled salmon, shrimp scampi (last night), several pasta dishes, potato salad to day. Not quite the usual July 4th in many ways.

Hope you and Larry enjoyed the holiday!!
