This Tex-Mex Enchiladas has been one around since 1987 and love it.

This one  has been around for a long time and I still like to make it extra other month and will see the dinner table tonight.

Ingredients:

1 pkg. Carrol Shelby's Original Texas Brand Chile Mix

2 lbs Ground Beef

2/12 cup  cold water

1 8 0z can tomato sauce

12 6 inch flour tortillas, warmed

1/2 lb Velveeta Process cheese spread cubed

Prepare Chili as directed on package using ground beef, water and tomato sauce.  Place approximately two tablespoon chili on each tortilla, roll tightly.  Place seam side down in 12x 8 inch baking dish top with remaining Chile.  Cover   Bake at 350 degree for 25 minutes.  Top with process cheese spread continue baking uncovered for 5 to 6 mins. 

Serve 6 to 8 people  Prep time about 35 minutes and baking time 30 to 31 minutes.

Hi Will... my husband is not a fan of Mexican food, so I virtually never make it... maybe some chili every other year or so.
