This pandemic might have been tiring us out and most of us are finding ways on how to somehow leave the stress and unwind for a while. Treating yourself with your favorite comfort food might be a good way to refill your energy tank so can have that drive to work again on the weekdays. We know that eating your favorite food helps to tame stress in several ways as other foods cut levels of stress hormones that take a toll on our body over time.

Did you know that eating desserts can be a mood booster? They are not only delicious, but desserts also have health benefits and help you keep a balanced diet. One of the common desserts that we go crazy over with is a Blueberry Cheesecake.

Blueberry cheesecake is a famous tasty dessert that has a tart flavor of blueberries together with a crunchy biscuit base and a creamy filling. You can find this at some of the cafes near you or you can just simply make one for you and for your family to enjoy! This might be a good stress-reliever and you know, cooking/baking is a family affair.

3 PORTIONS OF A BLUEBERRY CHEESECAKE

The Base. This is usually made from crushed biscuits mixed with melted butter. You can use any types of biscuits but most people prefer the digestive ones. You can also try using ginger biscuits to add some spice or maybe out biscuits if you want your cheesecake to be a little crunchy.

The Filling. For a delicious creamy flavor, you can use decadent mascarpone cheese mixed with cream or you can also go for healthy low fat.

The Topping. Your toppings can be made from fresh fruit cooked with sugar or you can choose using canned blueberries.

HOW TO MAKE IT

Ingredients:
Crackers
Melted butter
Cream cheese
Blueberries
Sour cream
Flour
Eggs
Vanilla
Lemon Zest
Sugar
Cornstarch

LET’S DO IT!!
For the base, you will be needing your favorite crackers (any type will do) and melted butter. Crackdown your crackers into tiny bits, mix with butter then press into the cake pan.
For the filling, mix the flour, eggs, sour cream, cream cheese, and sugar all together in a bowl. After that, pour the mixture into the crust then bake.
And finally for the blueberry sauce. Cook some of the blueberries with sugar, lemon, and vanilla to create a vibrant purple sauce. Stir in the cornstarch until it thickens, then mix it up with the blueberries.

As long as you have all the ingredients, making this will be so easy. You can add any additional ingredients according to your taste as long as it will complement the whole taste of the dessert. Enjoy your weekend!

We both love blueberries, and while they were in season, we had them everyday.  We recently had an amazing cheesecake with blueberries at one of our favorite restaurants. A
