Several years ago, I leaned how to make microwave brownies in a mug. They're easy, fun, and taste pretty good! If you haven't tried them, a quick search online will provide you with a selection of recipes.
Recently, I discovered a new recipe that is equally satisfying...pancakes in a mug!
I mean, who doesn't love pancakes?
And the recipe is super easy. Just put in equal amounts of pancake batter and milk, then microwave.
Starting out, I suggest sticking to 1/4 cup of pancake batter and 1/4 cup of milk, then microwave for 60-90 seconds (or a bit longer if necessary).
The bigger the mug, the more mixture you'll want to use, and the longer you'll have to cook it.
And of course, you'll want to make sure your mug is microwave safe, as some mugs heat up to dangerous levels.
In my experience so far, the finished product has a spongy feel to it, and pulls away from the inside of the mug quite easily.
Top with butter and syrup, or whatever your favorite pancake topping is, and enjoy!
