Refrigerator Pickles
Ingredients
2 English cucumbers (thinly sliced)
1 Purple onion (thinly sliced)
2 Jalapeno peppers (sliced)
2 cups water
2 cups apple cider vinegar
2 cups sugar
2 tablespoons kosher salt
Directions
In a large container combine cucumbers, purple onion and jalapeno peppers.
Combine water, apple cider vinegar, sugar and salt in a sauce pan and bring to a simmer
Pour mixture over cucumbers stir well and allow mixture to cool.
Once cool place in refrigerator and refrigerate for 24 hours, stir as often as possible over the next 24 hours.
