Pork Tenderloin - Cuban Style

I received this recipe years ago when I was dating a Cuban man.   I shared my green chile recipe, and he shared this one.  It is delicious, and forget I have it.   The house smelled SO good last night!

 

Pork Boston Butt or Tenderloin

2 cans of black beans

Olive Oil

2-3 T Garlic - fresh minced

Onion - sliced and diced

Bay leaf

1T cilantro

1 oz sherry

1 jar of Mojo Criollo sauce

 

Marinade the pork in the Mojo Criollo for at least an hour.    Chop up onion, add garlic and bay leaf, saute until tender, then add beans, cilantro and sherry.

Put pork into baking dish, adding the beans mixture and bake covered for one hour at 350 degrees.   Remove lid (or foil) and cook another 30 minutes.

Firstly, I love pork tenderloin, and this recipe sounds delicious, never heard of the sauce you use Mojo Criollo, will have to see where I can get that. I found a recipe on line and also at Walmart, But, I think I will make a batch up to use and try this recipe.

Nick Vandekar, 610-203-4543 I did find it at Walmart, but not at all, probably depending on the clientele for the neighbohood.  It was in the "goya" area of the mexican food.  But, we have a lot of mexican items, you may not.

Thanks,  ...  that looks like a great recipe ... the Wife loves the Cuban sandwiches, so I know she would jump on this.  Now, the Pork Boston Butt... I believe I ran into that when trying to rent a car 30 yrs ago at Logan Airport.
