
Friends Day Wednesday - Holiday Spicy Chicken Soup
Friends Day Wednesday means so much more in 2020! Last night we hosted two ActiveRain friends Nancy Laswick and Jan Green and Carol Williams (via phone) for a Holiday Happy Hour. It had been a long time since we're all gotten together. Nancy brought a lovely shrimp platter and champagne and Jan brought a fabulous spinach dip and chips and crackers. I made another one of my favorite soups - Spicy Mexican Chicken Soup. Perfect soup for chilly holiday evenings! This is a recipe I made up - let's get cooking!
Spicy Holiday Mexican Chicken Soup!
3 cups cooked chicken cut in 1/4" pieces - I use rotisserie chicken
3 or 4 cups chicken broth
I can creamy chicken soup
I can black beans
1 can dices tomatoes
I can corn, roasted in sauce pan with 4 tablespoons salsa
2 or 3 small cans of green chilis (depending on how hot you prefer)
1 cup 4 cheese blend Mexican Cheese
1 teaspoon pepper
2 to 3 teaspoons of cayenne pepper (depending on how hot you prefer)
1 teaspoon cumin
1 cup cooked brown or white rice (I used pre-cooked rice from Costco)
Easy Part - put everything in a Crock pot or Dutch oven and mix together. Cook on high for 4 hours then turn to warm until serving. Add a little more cheese if you like it cheesier. Taste the soup along the way to see if you need to add a little more spice. (cayenne pepper) I usually do as we like it hot!
