This Holiday cookie was always one of my favorite ones that my Mom used to make every Christmas. It doesn't seem as sweet as some of the common Christmas cookies. You do need a special griddle, but you can turn over the grids and make waffles too.
Italian Pizzelle
3 eggs, beaten
3/4 cup sugar
3/4 cup butter or margarine, melted
1 1/2-2 cups flour
1 teaspoon baking powder
2 teaspoons vanilla
1 teaspoon anise seed or extract
Add and beat ingredients together in order listed (use the smaller amount of flour for thinner pizzeles). Drop by rounded spoonful onto the center of pre-heated griddle. Close lid and immediately clip handles together. Allow to cook until steaming stops - about 60 seconds. Remove with a fork. Allow to cool on wire rack or towels. (While hot, may be rolled into cylinder or shaped into cones.) Dust with powdered sugar. Store in an airtight container.
