I Want Some Soup!

I want some soup!  Otherwise known as the words you will not ever hear come out of my mouth, especially for dinner, especially when it has arugula in it, especially when it has some strange ingredient called a Jerusalem Artichoke and especially if it has no meat in it.  I put my foot down. "Not a chance!" I said.  Like so many other times in my life, I was overruled by a greater being, My Wife!  She made it.  I ate it.  I begged for seconds.  It was delicious! The fateful words that all 30 year veterans of marriage know just slipped out, "You were right...AGAIN."  Hey, she cooked!  Hallelujah! 😃

Jerusalem Artichoke and Arugula Soup

Mary Margaret discovered this recipe in Ottolenghi, a cookbook written by Yotam Ottolenghi and Sami Tamimi.  It is simply a great cookbook.  We have cooked many items from it and have never been disappointed.  We own two more cookbooks that they have authored, Plenty (vegetarian) and Jerusalem.  I am sure we will end up owning every cookbook they publish. The recipe for this soup is easy.  Finding the Jerusalem artichokes (aka sunchokes) was challenging.  We ended up finding them at Whole Foods Market. The soup tastes lemony, even though there are no lemons added, and is creamy and satisfying.  we garnished each bowl of soup with a little fresh arugula, then sprinkled on a little paprika.  I am already looking forward to leftovers! ! !

Your story made me laugh. I was vegan for about four years (currently mostly plant based but meat has been slipping back in) and I know how much people can assume they won't like a recipe. My experience has been that people almost always are very pleasantly surprised.

I absolutely hate garlic. I am printing the recipe to try but will be reducing the garlic considerably.

I am pretty darn lucky, Patricia Feager, MBA, CRS, GRI,MRP.  We do make a good team.  She has already made another soup, swiss chard, lentil soup.  I feel another post coming on.  I may title it, Oops, She Did it Again!  I think she is bound and determined to get me on the soup band wagon.  I figure if I keep complaining, she will keep cooking.  I a kind of sneaky. 😇 Thank you for your always positive input.

Dear Raymond,

Sounds very yummy! Used to have sunchokes, because they have pretty yellow flowers, but someone absconded with them one winter. They are good food for people with insulin issues and were a staple for native folks in this area. Their name has nothing to do with Jerusalem, but a variant on the Italian or Spanish word for sunflower, girasol.
