Hi Raymond- my mother used to make eggplant parm and I loved it. I did try making eggplant once and both Larry and I got sick! LOL I'm going to try it one more time on the grill...I love Baba Ganoush!

Love eggplant and have never thought of cooking it this way...or combining it with Pomegranate seeds, Raymond. I'm definitely going to have to try this!

My goodness Raymond Henson, SRES, GRI that sounds delicious and healthy too! I don't have a gas stove or a grill or I would try it. In TX most homes are all electric and most homeowners have barbeque grills too. I'm just not one who has gas or a grill. But hey! If I ever come to Elk Grove, CA, and met up with you, it would be a real treat!

There is an alternative, Patricia Feager, MBA, CRS, GRI,MRP. You can "burn it" under a broiler, though I have not tried that yet.
