Okay, now this is where we bring Sexy Back to Baby Back ribs!
1 rack baby back pork ribs ( appx 3 to 4 pounds )
32 oz barbeque sauce
4 Tablespoons vinegar
¼ lime juice
¼ cup honey
¼ teaspoon cinnamon
½ teaspoon cayenne pepper
Cut rack of ribs in half and place in a crockpot. Cover with remaining ingredients. Cook on low for no less than 4 hours and no more than 10 hours. This will allow the fat to render and the tendons to soften and yet not have the ribs fall apart. Turn off crock pot and allow juices to start to cool ( about 10 minutes ).
Now take ½ cup of juices from the crock pot ( including some solids is okay too ). Combine with 4 tablespoons of honey , ¼ cup of Dr. Pepper , ¼ cup lime juice , ½ teaspoon cinnamon , ¼ teaspoon cayenne pepper , appx 30 craisins. Place all these in a micro blender such as a Magic Bullet. Blend to eliminate 95% of solids. This will become a thick liquid. You should taste barbeque sauce, then notice a slight sweetness with a hint of tart followed by a slight warming of the mouth.
Preheat out door grill to between 600 and 700 degrees. Cook ribs bone side up for about 3 minutes. Now, turn off majority of the heat and turn ribs over. Use a brush to gently baste the ribs with the Dr. Pepper mixture. Baste every 3 to 5 minutes and cook for no more than 12 minutes on this side.
Remove from heat and let meat rest for 10 minutes before cutting into portion sizes. Serve with the Dr. Pepper mixture on the side as an extra dipping sauce or gravy. Serves 4 people.
