Easy Peasy too!

What you need is:

2 cups of Baby Spinach (60g)
Pecans or Cashews (60g)

Olive or Avocado Oil (30 ml)

Whir it up in a food processor or high speed blender until a paste forms.  Fresh Spinach Pesto

Cook 2 slices of diced bacon til crisp and stir into above paste.

Take 2 boneless chicken breasts and slit open to form a pocket a fill each pocket with equal amounts of paste.  Sprinkle with paprika.

Place on baking sheet and cook 30 minutes at 400 degrees.

Take a large bag of arugula approx 125 g, and toss with 2 tbsp of olive or avocado oil with 1 tbsp of Sherry Vinegar or any other favourite vinegar.  How to Cook with Arugula

Place 1/2 the arugula on each plate and top with a chicken breast  on each plate.

Kat Palmiotti  I was surprised by how much I enjoyed this one!!  It would probably work on the grill too if you didn't want the oven on.  Hope you like it as much as we did :)
