Looking for a nice bright & light lunch? You might enjoy what we just had at Emo's Eating Emporium -
Baked Chicken Breast stuffed with a No Cheese Spinach Pesto - YUM!
Easy Peasy too!
What you need is:
2 cups of Baby Spinach (60g)
Pecans or Cashews (60g)
4 cloves of garlic
Olive or Avocado Oil (30 ml)
Whir it up in a food processor or high speed blender until a paste forms.
Cook 2 slices of diced bacon til crisp and stir into above paste.
Take 2 boneless chicken breasts and slit open to form a pocket a fill each pocket with equal amounts of paste. Sprinkle with paprika.
Place on baking sheet and cook 30 minutes at 400 degrees.
Take a large bag of arugula approx 125 g, and toss with 2 tbsp of olive or avocado oil with 1 tbsp of Sherry Vinegar or any other favourite vinegar.
Place 1/2 the arugula on each plate and top with a chicken breast on each plate.
The good news is, with 58g of protein and only 11g net carbs makes it a healthy lunch or dinner too!
