The proportions on this are estimated since I am so used to making this by feel that I'm not sure...
3 cucumbers slices 1/4 inch thick and into 1/4's again
6 oz. feta cheese
6 oz calamata olives, pitted
1 large sweet onion
1/3 c good olive oil
salt (more than you think)
mix all ingredients, taste and adjust and serve...
This is always a huge hit...try it this summer, you will love it

Sounds like a recipe I would love for a side dish, thanks here is a question, how do you do the onions, chopped, or sliced? Do you use the red ones, or white?
