Pictured above are our crazy and fun-loving friends Connie and Kevin at a Halloween party we all went too! I've known these two since my 20's. Connie was my older sisters friend and when they moved to Phoenix in 93 I helped them buy a home and we became fast friends. The four of us have had a LOT of fun over the years doing all kinds of silly stuff. Too many costumes and events to possibly blog about!! And we continue to do our 'job' coming up with new plans and ideas. Most of the plans are around cooking and wine! Fun!
Last Saturday we were over at their home for dinner. Kevin did his usual smoker thing and Connie slipped in Drunken Coleslaw. It was delicious! I asked her how she made it. It tasted so very different than other coleslaws I've had over the years. Connie said it was the easiest recipe - ever! She keeps the ingredients on hand all the time as you never know when you need a quick dish to serve up or bring to a party.
Drunken Coleslaw Recipe
2 cups raisins
1 cup rum - whatever kind you have on hand
Marie's Coleslaw Dressing
1 package coleslaw (14 ounces)I prefer 3 or 4 color variety
Soak the raisins in rum over night in the refrigerator. Put the bag of coleslaw mix in a bowl. Mix in 2 or 3 tablespoons of Marie's Coleslaw dressing or as much as you prefer. I don't like a lot of dressing in coleslaw so 2 or 3 tablespoons worked for us. Drain (do not rinse them) about 1/4 cup of the raisins, add to the coleslaw, mix in well.
Keep the soaked raisins in the refrigerator along with Marie's Dressing for future salads. All you need to pick up is the coleslaw package!
