July Challenge - Asian Chicken Salad

This salad recipe is one of our family favorites.  It is very easy to make, very flavorful, and serves about 6 - 8 people.

One of my friends tasted it for the first time when we went for a picnic.  She said it tasted just like the salad from Panera Bread!

 

Since this salad has now become famous among family and friends, I thought I share the recipe here.  This will surely make you look like a professional chef!

  

Ingredients:

Salad:
1 lb salad spring mix or a combination of power greens and any lettuce of your choice
1/2 bag of shredded carrots
1 large bunch of cilantro, chopped
1 medium-size red onion, halved, thinly sliced
2 bunches of green onion, thinly sliced or chopped
4 grilled chicken breast, sliced, or shredded roasted chicken breast
peanuts and chow mein noodles
1 can of drain mandarin oranges (optional) 

 

Sauce:
1/3 cup heaping and packed light brown sugar
almost 1/4 cup pure sesame oil (pour 1/4 cup and take out 1 tablespoon full)
1/2 cup vegetable oil
1/2 cup + 1/8 cup rice vinegar
1/4 cup + 1/8 cup soy sauce or low sodium soy sauce
If using low sodium soy sauce, add about 1/8 - 1/4 teaspoon salt or as desired

 

Method:

Put all ingredients for the sauce in a large bowl and mix well using a whisk.  Let it stay in the fridge overnight.

Put all salad ingredients in a large salad bowl, pour the sauce that has stayed overnight in the fridge, and toss evenly. 

Serve on individual salad bowls. Sprinkle with more peanuts, chow mein noodles, and mandarin orange slices, if using, on top.

sounds like something we would really like at my house, but we'd probably go with almonds and not peanuts (just a personal preference)
