Summertime Dining in the great outdoors!

When the sun is shining and there's a slight breeze under a bright blue sky, we simply must entertain outdoors - I think it is a pretty hard fast rule! At least it is law at Emo's Eating Emporium, lol

We're getting ready to host family for my Mother's 93rd Birthday and we've decided on a casual BBQ Buffet.  Always a concern is flies!!!   This year I've come up with a fail safe plan and am now busy selecting which of my 3 favourite salads will be served along with the 5 different Shish Kebobs we're grilling:

Shrimp & Sausage skewers
Steak Fajita skewers
Asian Chicken & Pineapple skewers
Bacon & BBQ Chicken skewers

And one cold skewer made of Italian Cold Cuts & cheeses.

The salads will be presented in 1 gallon glass jars like this with the lids. 

So far I've selected a Broccoli Cashew Apple & Pear Salad plus a layered Taco Salad and am still considering one more from many of my favourites.

 My husband despises Pasta Salad of any sort so that is ruled out.  Too many diabetics for Fruit Salad, lol    I'd hate to serve something so simple as a Caesar Salad so I'll keep searching for something colourful and different. 

Any suggestions are most welcome!!!!
