A Healthier Fried Haddock Option

Many years ago, in an attempt to eat healthier, my mother created a recipe to replace her favorite fried haddock. 

Her delicious haddock recipe was passed on to me and then to my daughters.

It is one of our family favorites, very easy to make, and much healthier for those looking to cut fried foods from their diet.

 

HADDOCK A LA RICE KRISPIES

1 lb Fresh Haddock

1 C Rice Krispies

1 egg white

3 Tbsp Butter (melted) or Olive Oil

I use organic crispy rice cereal

made by Erewhon.

It is available at health food stores and many

of the chain grocery stores also have it.

Any rice crispy cereal will work.

 

 


cereal in bag Start by placing rice cereal in a zip lock bag and crushing with rolling pin or meat tenderizer. 

You don't have to pulverize it, just break it up enough that some of the cereal is crushed and some is still whole.

 

Prepare broiler pan by covering with foil and spraying foil with non stick spray.

Preheat oven to 375.

Place egg white in bowl and beat together with 1 Tbsp. water.  Dip haddock in egg white and then place into bag of cereal.

 Think Shake 'N Bake.  Toss fish around in bag until coated. Place fish on pan.

Pour remaining cereal on top of fish.

Salt and Pepper to taste.

Drizzle melted butter or olive oil over top. 

 

Bake at 375 degrees 10 - 12 minutes, until fish is white and flakey. 

 

A Simpler,  Much Faster Method

Place raw fish on a foil lined cookie sheet or broiler pan.

Pour some uncrushed Rice Krispies right from the box over the fish,  until the fish is completely covered.

Drizzle melted butter or olive oil over the cereal and bake.
