Fennel and Feta with Pomegranate Seeds and Sumac
This is one of our new favorite salads. It is very refreshing and is full of flavor. If you have not tried sumac, you are in for a treat. It has a lemony, fresh flavor that pairs very well with fennel. We even sprinkle sumac on our popcorn with a little salt and, of course, butter. You may notice in the picture above that we substituted tangerines for the pomegranate seeds. We prefer the pomegranate seeds, but the citrus adds a nice touch to the salad too. We found the recipe in Ottolenghi, The Cookbook. It is one of a series of cookbooks by Yotam Ottolenghi and Sami Tamimi. We have several of their cookbooks and they all are exceptional.
Fennel Salad Ingredients
- 1/2 pomegranate (tangerines and oranges work well too)
- 2 medium fennel bulbs
- 1.5 tablespoons olive oil
- Juice of one lemon
- 2 tablespoons chopped parsley
- 4 tablespoons of chopped tarragon leaves
- 2.5 oz. feta cheese
- salt and pepper to taste
Make a vinaigrette with the oil, sumac, lemon juice, herbs and some salt and pepper.
Slice fennel bulbs thinly and chop some of the green leafs for a garnish.
Toss the sliced fennel with crumbled feta, pomegranate seeds and vinaigrette. Garnish with the green fennel leaves and sprinkle with a little more sumac.
Option-the cookbooks prefer the salad to be layered starting with the fennel which has been tossed in the vinaigrette, then the feta, followed by the pomegranate seeds and the garnish.
