Fennel and Feta Salad with Pomagranate seeds and Sumac

This is one of our new favorite salads.  It is very refreshing and is full of flavor.  If you have not tried sumac, you are in for a treat.  It has a lemony, fresh flavor that pairs very well with fennel.  We even sprinkle sumac on our popcorn with a little salt and, of course, butter.  You may notice in the picture above that we substituted tangerines for the pomegranate seeds.  We prefer the pomegranate seeds, but the citrus adds a nice touch to the salad too.  We found the recipe in Ottolenghi, The Cookbook.  It is one of a series of cookbooks by Yotam Ottolenghi and Sami Tamimi.  We have several of their cookbooks and they all are exceptional.

Fennel Salad Ingredients

  • 1/2 pomegranate (tangerines and oranges work well too)
  • 2 medium fennel bulbs
  • 1.5 tablespoons olive oil
  • Juice of one lemon
  • 2 tablespoons chopped parsley
  • 4 tablespoons of chopped tarragon leaves
  • 2.5 oz. feta cheese
  • salt and pepper to taste

Make a vinaigrette with the oil, sumac, lemon juice, herbs and some salt and pepper.

Slice fennel bulbs thinly and chop some of the green leafs for a garnish.

Toss the sliced fennel with crumbled feta, pomegranate seeds and vinaigrette. Garnish with the green fennel leaves and sprinkle with a little more sumac.

Option-the cookbooks prefer the salad to be layered starting with the fennel which has been tossed in the vinaigrette, then the feta, followed by the pomegranate seeds and the garnish.

We really enjoy this salad.  If you try it, please let me know what you think.

ray sounds like you collect cookbooks like I do!  I love trying new recipes and reading new cookbooks.  I'm not familiar with these folks, but I am now.  The salad sounds delicious!

Sumac was new for me, not too terribly long ago, Michael Jacobs.  It has been fun to try using it in different ways.  Then again, fennel is pretty new to me as well.  Much of my life does center around the kitchen.  😃

Hi Anna Banana Kruchten CRS, Phoenix Broker.  You might be surprised to know that Mary Margaret has banned me from buying cookbooks because I already have so many.  One agreement held that I can buy one if I let one go.  It worked for a short time, but I ran out of give away cookbooks.  I just break the rule now. 😃

If you like cookbooks, I think you will like any of theirs, but the break out cookbook for them was Plenty.  It is a vegetarian cookbook.  They do have others that are not vegetarian.

Hi Nina Hollander, Broker.  The beauty about salads is that many of the ingredients can be changed.  If Mary Margaret and I ever have the pleasure of cooking for you, I will make sure no feta is on the salad or even in the house.  I have a good friend that refuses to eat Parmesan. Who does not like Parmesan?  Still, we make arrangements when we cook for him.

Good morning, Joan Cox.  After trying sumac, I am surprised that it is not utilized more.  I still forget about it, but am trying to use it more often.  I hope you enjoy it if you do end up trying it.

 

Hi Kathy Streib!  I figured if someone like one of the items I review, then they might like some of the other items.  I was surprised at how diverse the list was from Cornish Game Hens to hot dogs to Velveeta cheese dip.  It sounds like fennel, feta and this salad will not be making an appearance at your table any day soon.  We will have you and Larry over the same day we cook for Nina.  😃
