Yesterday afternoon, 10 of my family members gathered to celebrate a milestone birthday for my youngest grandkid. Sophia is turning 18.
There was a wonderful vegetable soup that my daughter Jill and grandkid Macie, cooked up. There was a charcuterie board that granddaughter Isabella created. Along with a delightful shrimp dish that my kid Tami, made, I brought along a citrus salad. This salad is a little different, but you might wish to give it a try. Here's the recipe.
Ingredients:
2 Blood Oranges - Peeled and Sliced.
2 Cara Cara Oranges - Peeled and Sliced.
2 Navel Oranges - Peeled and Sliced
1/2 Red Onion - Halved and Sliced
Tajin Seasoning
1/4 Cup Sliced Almonds
1/4 Cup Honey
2 Limes Squeezed into Juice
Fresh Mint Leaves - Sliced
Directions: Arrange Orange Slices in a bowl, with the Onions. Sprinkle Tajin Seasoning atop. Shower with Sliced Almonds. Stir the Honey and Lemon Juice together, and drizzle over all. Top with Mint Leaves.
