2 carrots diced.
3 celery stalks diced.
1 6 oz can tomato paste.
1 cup dry white wine.
1 cup whole milk.
1 cup chicken broth.
Salt and pepper to taste.
In a heavy pot heat olive oil. Add vegetables and sauté until wilted, do not brown.
Add ground beef and sausage cook until meat is done and drain off excess fat.
Add tomato paste and mix thoroughly.
Add wine, milk, and chicken broth.
Cook until comes to a boil.
Reduce heat to low and simmer 2-3 hours.
Serve over you favorite pasta.
This is a true Bolognese sauce the only tomato is the small can of paste, it's more about the thick meat sauce, and not the tomato.
I hope you enjoy.
