Cheesy Zucchini Casserole

Chef Dolores used the Allrecipes Cheesy Zucchini Casserole Recipe and we really enjoyed it. She will be  using this recipe again. She used green and yellow zucchini, about 2.5 cups, one tablespoon of garlic powder rather than the garlic salt, one tablespoon of Mushroom Umami from Trader Joe's and two beaten eggs rather than one. You can make adjustments as you wish. Click on the link to view the recipe and an instructions video.

Good morning Roy. Never a zucchini fan, my wife has made me into a rabid fan with a recipe close to this one. Enjoy the casserole.

This does sound yummy. I'm thinking that using ciabatta bread, and perhaps a combination of cheeses would be good too. I might have to try this once my zucchini start growing big enough!

Hmm, I don't think I am much of a zucchini fan but also I don't think I have really given it a chance, haha.

Good morning Roy,

Zucchini is really very good. I never gave it a chance until the last couple of years..it's also great grilled with olive oil and spices with red pepper and purple onion or sliced and dipped in egg and rolled in cracker crumbs and cooked in oil ..sprinkled with sea salt and parmesan chees.

The result looks very delicious. I enjoy zucchini sauteed lightly in olive oil.

Roy, this looks really good, and haven't really had zucchini in a while, but find many Allrecipes I love.

Hi Roy= I'm definitely trying this one. My mother used to make a squash casserole and we all loved it. Please tell Chef Dolores thank you.

I have an over abundance of squash in my garden this year.  That recipe looks great.  I'll give it a try.
