Lemon Infused Pasta with shrimp! A Recipe by Endre Barath, Jr.

As most of you who read my blog posts, know I love to cook and create some special meals. Well a while back Ray Henson  wrote a post about Preserved Lemons.www.endrebarath.com

I immediately sent him the above picture in a comment. Yes, I do make preserved lemons. Now with that said I wanted to do something extra special. Last couple days I have been thinking about making infused lemon pasta. Not your average pasta, but still simple.

The recipe is quite simple: 

1. Boil Cold Water to make the pasta but add three or four quarters of preserved lemon into the water and some salt that you would normally do for boiling pasta.

2. Once the water is boiling add the pasta of your choice and boil it al dente.

3. In the meantime in a large pan, add extra virgin olive oil, two minced garlic or three. Handful of chopped Italian Parsley shrimp of choice about 9-12 peace's, mine happened to be frozen shrimp from Trader Joe's and a little unsalted butter.

4. Sautee for about 9-10 minutes while the pasta is boiling. Then add some chicken or vegetable stock about a cup or two.

5. Add about a cup of heavy cream once blended add the pasta and combine for about a minute or two to get the sauce blended with the pasta.

6. Once done serve immediately with black pepper and shredded Reggiano Parmesan cheese to your liking.

Now if you do not have preserved lemons throw in some fresh lemons into the water cut them up into about six or eight portions. Then in addition do the same with another lemon as you sauté the shrimp. The flavor will not be as pronounced but still will be fine. Bon Appetit!!!

Sounds delicious as I love lemon-flavored shrimp Endre Barath, Jr. I have a similar recipe without the cream sauce.

Hi Hannah Williams, here is the recipe that I use for my preserved lemons.  This is a quick version from the same chef, Yotam Ottolenghi. I have tried both recipes and like both of them.  I would love to know how Endre Barath, Jr. makes them.

I saw your post on Twitter and thought this recipe looked delicious.  I had never thought of putting the preserved lemons in with the pasta as it was boiling.  That is very interesting and I will need to try it.  When I made my preserved lemon pasta, I did not use cream and Mary Margaret was disappointed.  I will definitely follow your recipe next time.  Thank you for the suggestions!

Endre Barath, Jr. - it's nice that Ray Henson's post bounced an idea on you and now you both may have bounced an experiment for me to try. First of all, I'll share my sin. I don't eat shrimp, lobster, or any sea food. I know, my kids think its dreadful. But I think I may try this recipe without the shrimp. What do you think?

I think the recipe would be great without any meat at all, but I think chicken would work.  I enjoyed a meal at a restaurant similar to Endre Barath, Jr.'s dish that was without meat and it was very good.

All that being said, Patricia Feager, MBA, CRS, GRI,MRP,  the shrimp addition sounds great to me.  I hope you let us know how your pasta turns out!

Oh my, Endre, this sounds AMAZING! I don't have preserved lemons but, need to read up on preserving some for infused pasta...and maybe some infused vodka?!!

I will definitely be adding this to my collection as we LOVE pasta and shrimp - in fact, we had it night before last at a local Italian restaurant at a dinner with about 20 of us. I was thinking of adding a smidgeon of chopped bacon on top.

You just gave me an idea, Endre.  I make a pasta with shrimp dish that is very similar to the one you have here.  The only difference is I use Fettucine for the pasta instead of Penne.  I like the look of your's better!
