Probably one of the easiest one pot dish, you can make. If you have leftover chicken breasts easy to make.
12-16 ounces of Orzo (Italian pasta) toa.st with garlic and butter for about three to four minutes (2-3 cloves of chopped garlic)
then add sundried tomatoes about a cup or so with a couple tablespoons of tomato paste.
Add about 2 cups of milk and about 3-4 cups of vegetable or chicken stock
Add the leftover chicken breast chopped, to bite size. Let it boil and then reduce and stir consistently for even flavors and even cooking of the Orzo. Add fresh baby spinach and a cup or so of shredded parmesan cheese. If needed add more vegetable stock and let it reduce to almost no liquid. Let me know how you liked it.
