Recipe - Blueberry Cottage Bowl

Yes, I'm going out on a limb here, knowing that ½ of the population doesn't like cottage cheese...BUT, you can substitute yogurt if you don't like it!

I've been trying to be consistent watching my weight for the past year. Two of the biggest points that I learned when doing the previous diet I was on, was eating 5-6 times a day and drinking at least 90 oz of water helped me tremendously. Prior to that diet, I would go all day without eating, only having dinner with Ray - that was it. When you do that, your body goes into fat-save mode and it holds onto everything you eat because it thinks you may not feed it again.

I am a total believer in this because when I was in college, nutrition was a big focus for us when it came to my nursing curriculum. We learned that breakfast gets your body started, lunch keeps it going, as do healthy snacks a couple of times a day...and dinner, it's a must but, early evening is best.

Back to the point, I have moved to merely watching what I eat, documenting everything I eat and in one week, lost 7 pounds! I am eating 'real food' and not on the previous diet I was on and this seems to be working fabulously. I realized that I am going to have to eat 'normally' at some point - I can't live on 'packets' the rest of my life! While those packets were definitely a healthy version of foods that we eat, it was easy to become dependent upon them.

One day, I will write about this journey in more detail but, for now, this is a recipe of a snack that you have mid-afternoon or as an evening snack. I LOVE this and will make this several times a week, I am sure of that!

Without further ado, here is the recipe:

1/4 C. Blueberries
1 T. Sugar-free maple syrup
1 t. low-fat (Swerve) brown sugar
Dash of cinnamon
½ C. cottage cheese (or vanilla or plain, fat-free Greek yogurt)

Preheat oven to 350º. In a small ramekin dish, combine the first 4 ingredients. Bake for 22 minutes. Allow to cool and then top the cottage cheese (or yogurt) with the blueberries...Simply DIVINE!

Bon appétit! May you have a wonderful (& healthy) week!

It is strange.  I love cottage cheese, but I can't remember the last time I had it.  I am trying to drop some weight, so I can move better on the pickleball court, so I will have to try your recipe.  I like the idea of the warm blueberry topping with it.  I also like the idea of many small meals through the day.

I look forward to hearing more about your journey!

HaHa, Endre Barath, Jr.! A lot of people poo-poo the idea that the body hold onto fat because it is only fed once a day but, it's true. Think of those who try intermittent fasting at our age. It just doesn't work for 95% of the population. Instead, our bodies try to store the fat, fearing we won't be fed again. Believe me, it's a real 'thing!!'

And, of course you love cottage cheese! We are siblings after all! LOL

Debe Maxwell, CRS I saw some post on Instagram, did you know, cows, and other large four-legged animals all they eat is grass and walk? so clearly eating vegetables and walking is overrated as well after all they are all fat .....another thing I need to share with my Doctor when I see her:))Endre

Ray Henson, I just finished my 'midnight snack' and had just that - it's my favorite 'fueling' of the day! It's low-cal and simply delicious! I do hope you try it and please, do let me know what you think.

Hi Dorie Dillard Austin TX! I hadn't had any in a very long time and when my friend suggested it in this 'diet,' I was excited to have some. I was totally surprised by the combination of the cottage cheese and the blueberries. All I can say is, it is to-die-for!

Sounds yummy Debe - I like cottage cheese and blueberries! I also remember from nursing school breakfast is the most important meal and not to be skipped. Also eating dinner late is very bad for the weight!

Best advice I've heard for portion control is to Eat Like a KING for breakfast, Like a Queen for lunch and like a pauper for dinner :)

Many Americans do the opposite.... hence once factor in being overweight is actually from some cultural norms or habits( as well as food and portion size choices).

Great job on your diet!

Sincerely,

Grace

I was sitting here trying to remember the last time I have had plain ole cottage cheese.  I use to eat it all the time.  I think what happened was I switched to yogurt, and haven't really looked back.  That picture looks wonderful.  I need to revisit cottage cheese.
