RECIPE: Yellow Tomato Salsa - Mojito Style

Makes 6 servings

 

This is a great healthy appetizer to serve while watching your favorite college or pro football games this weekend! It’s easy to prepare and despite being healthy, is delicious!!

While salsa is more commonly served with chips, I am a huge fan of mini rice cakes topped with this salsa. Rice cakes come in several flavors that pair so well with this salsa, including buffalo chicken and buttermilk ranch.

If you’re turning up your nose at rice cakes, try them again. Today’s are not your mother’s rice cakes!! Anyway, on to the recipe!

 

SALSA INGREDIENTS:

  • 3 cups yellow tomatoes, grilled (or broiled 3-4 inches from the heat)
  • 1 tbsp olive oil
  • 2 tsp minced garlic
  • 1 tbsp red onion
  • ½ tsp salt, divided
  • 2 tsp lime juice
  • 2 tsp Swerve sweetener
  • 2 tbsp fresh mint

 

DIRECTIONS:

Grill tomatoes until the skin is slightly charred, about 3-4 minutes on each side. Cool to room temperature. Meanwhile, combine oil, garlic, onion and 1/4 teaspoon salt. When tomatoes are cool enough to handle, finely chop; stir in garlic until well combined.

 

In a food processor, pulse lime juice, Swerve, mint, and remaining salt until finely chopped. Combine with tomatoes; Top with chopped mint. Mix well.

Refrigerate for at least 1 hour.

Serve with your favorite chips and ENJOY!
