Wordless Wednesday…Thanksgiving Leftovers Redux

 

It didn’t take long for us to tire of turkey, dressing, and the rest of our delicious Thanksgiving leftovers!  

 

We’d sent guests home with doggie bags and yet we still had enough for several meals. 

 

When in doubt… make a casserole!!! A friend made this years ago and  I decided to give it a try!!! After reading several recipes online, I threw everything together and we loved it. 






Here’s a link to one of the recipes. I used leftover dressing, corn casserole, turkey, green bean casserole, cranberries, and some extra corn, and topped it with the leftover mashed potato casserole I’d made (I added more sour cream). It was topped with cheese and baked! 

 

We loved it!!!!

Good morning Kathy. With shrewd planning on the size of the turkey, our leftovers are gone. That said we did not have a corn casserole on the menu and and you mention of one, has my mouth watering. Enjoy your day.

Wayne Martin We had a 20 pound roasted turkey and two smaller smoked turkeys!!!  I don't want to see turkey for a while.

Kathy, The last leftover was a turkey pot pie, and now we won't be seeing any turkey here again until next Thanksgiving!

Hi Kathy... that sounds like a very interesting and tasty recipe. I use leftover turkey for casseroles, but as I don't have stuffing or mashed potato or corn casserole I use noodles and add in veggies.

I made a turkey pot pie for dinner last night - I cooked up some veggies, made a cream sauce, added turkey and topped it with a piece of puff pastry (which I did not make!) - we still have a little turkey left.  I am so done with turkey like the rest of us are!

I don't like to waste food but I think I am done with the leftovers.  I have enough for one more meal.  I like your twist for enjoying the leftovers in a different way.

Kathy in all the Thanksgiving I have lived through, we have never made a casserole with the leftover, but I love the idea and will mention it to my wife.

Kathy Streib  yesterday I spent 4 hours doing my turkey stock... and tonight we had Turkey soup.... now with that said tomorrow we are taking a break and then I will do turkey soup in a pumpkin container:).... oh I almost forgot the leftover meat will become turkey meatballs:)Endre

I tired of turkey last Sunday.  Thank goodness I was able to freeze a lot of it into TV dinners for future use.  The casserole looks really good, Kathy.
