It was an evening for ‘comfort’ food and nothing screams comfort more than my MawMaw’s sauces! This one is packed with garlic parmesan flavor that compliments any pasta and/or protein.

MawMaw’s BEST Alfredo Sauce

 

This Alfredo Sauce is UBER rich & creamy, and not the recipe I typically prepare because of how very rich is it! It was an evening for ‘comfort’ food and nothing screams comfort more than my MawMaw’s sauces! This one is packed with garlic parmesan flavor that compliments any pasta and/or protein. Sometimes it’s best served with bacon bits over some penne pasta as a side. Other times, it’s the perfect sauce to compliment the protein for a main dish. Most often I serve it with a salad but, last night, I was craving broccolini after reading one of Endre Barath, Jr.'s recent dinner blogs!

Without further ado, here’s the simple recipe…
Makes 2 Cups

 

Ingredients

  • ½ C Butter
  • 1 ½C Heavy Whipping Cream
  • 2T Cream Cheese
  • ½  tsp Italian Seasoning
  • ½ tsp Salt
  • Pinch of Nutmeg (she added this to a LOT of dishes - not sure what it does for this dish but, I never leave it out because MawMaw knew best!
  • 3 tsp Garlic, Minced (about 3 cloves of garlic)
  • ½ tsp Pepper (yes, I use Smoked Pepper in this recipe too!)
  • 2C Freshly Grated Parmesan Cheese 

 

Instructions

  • Add the butter, cream cheese, whipping cream and garlic to a large skillet.
  • Simmer over low heat for a couple of minutes.
  • Whisk in the parmesan cheese, stirring until melted.
  • Add the seasonings and continue to simmer for one more minute, stirring constantly. Adjust seasonings as you wish.
  • Serve immediately over your favorite pasta.

 

*NOTE: Don’t go cheap on the parmesan - use ‘the good stuff’ (FRESH) - it makes all the difference in an Alfredo Sauce.


 

 

For last night’s dinner, I sautéed some fresh shrimp with seasoning and in bacon olive oil, until pink. I also boiled my penne pasta with a little bacon olive oil as well. I drained the pasta, served it with the shrimp, poured over the sauce and added a sprinkle of fresh cilantro. I also sautéed the broccolini for just about 3-4 minutes to serve alongside the pasta. It definitely hit the ‘comfort food’ spot!
